Baobab mousse with moringa biscuit

What about a chocolate and baobab mousse with a moringa biscuit?
Today we present another innovative dessert, featuring baobab and moringa, two ingredients that are still quite unknown and unused, but characterized by a high nutritional and gastronomic value.
This recipe is divided into two parts: one for the mousse and one for the biscuit.
Ingredients for the mousse:
345gr dark chocolate, 4gr gelatin sheets, 250gr whole milk, 500gr fresh cream, 4 spoons of baobab powder.
Method:
Bring the milk to a boil, then use it to melt the gelatin that you’ve previously put in cold water (and squeezed) and the baobab powder.
Pour the hot milk onto the chocolate and stir until it becomes smooth and homogeneous. When the mixture reaches 38/40°, add the whipped cream.
Ingredients for the biscuit:
3 eggs, 100gr almond flour, 100gr powdered sugar, 130gr egg white, 35gr granulated sugar, 75gr 00 flour, 35gr butter, 2 spoonfuls of moringa powder.
Method:
Beat the eggs with the powdered sugar, the almond flour and the moringa powder in a planetary mixer.

Add part of the egg whites that you’ve previously beaten until stiff with the sugar, then the sifted flour, the rest of the egg whites and the warm melted butter.
Roll on a baking tray (or in moulds) and cook in the oven to 240° for 6/8 minutes.
Arrange the dessert on a plate and decorate as you like, using your creativity!
